My Week in Food

Well, it has been a short working week after the bank holiday, and another weekend of fun awaits us as we head to see friends in Manchester, and then celebrate Matthew’s birthday. Still, we managed to fit in some healthy food.


Nicoise Salad

On Tuesday, we both got home at about 8pm so wanted something super speedy. I love Nicoise Salad. I know it contains more calories than some salads, but it has a great amount of protein in, and fairly limited carbs. This came to 415 calories without dressing. We then made a vinaigrette which will have added about 100 calories, but of course you could pick a lower-calories option.

We used (values per portion):

150g new potatoes
1 egg
30g anchovies
35g olives
1 baby gem lettuce
50g green beans
1 tomato
1/2 can tuna (in spring water)




Hairy Dieters Chicken Jalfrezi

I have heard great things about this recipe from two of the most dedicated health/weight conscious people I know, so it was high time I cooked it.

The carry is only 280 calories per portion, and we served it with cauliflower rice is about 100 calories.



I recently discovered just how handy a food processor is when it comes to making cauliflower rice. Seriously, I used to grate this by hand. What was I thinking? Now I just whizz it up, and pop it in the microwave until it’s tender. Easy!



This recipe was quick and easy to cook, and was absolutely delicious. I will be making this again!
