Insomnia and Recipe of the Week

Ugh. I slept for about 2 hours on Tuesday night. Bedtime was at a pretty decent hour – at about 11.15pm and I then slept fine until 1.30am. Then. Just. Awake. I of course nodded off at 6.30am, right before my alarm went off. Ideal.

So, my plan was to run to work on Wednesday morning (since I left my bike there to go for sushi dinner with Matthew) – but this was not to be. It was all I could do to get myself to the train. I rewarded myself for this heroic effort with breakfast.

I went for the five grain porridge, which is 204kcal per portion, so not too bad. It was quite tasty too.

I’ve been hankering for porridge all week, but obviously cannot justify spending £5/day on breakfast. When I’m functioning on two hours’ sleep though, I absolutely can.

Fortunately, I survived the rest of the day; even the cycle home. It does leave me looking for ways to shoehorn more running into this week if I want to avoid doing a longer run on Saturday (Paellacue) or Sunday (aftermath). Hopefully I can do this on Thursday/Friday.


Mushroom Risotto

Risotto recipes are easily modified to have loads of vegetables or fish, and reduced carbs. I love mushroom risotto, and used the BBC recipe as my starting point.

However, I used four large packet of mushrooms, and only 400g of rice. This then made 5 portions, so it will have come in well under the 450kcal of the original recipe.

At first, it was quite hard just to get them all in the pan, but of course they shrink down loads…
