I have tried several recipes from The Healthy Food Guide – a magazine I got in my Wimbledon Half Marathon race pack – and so far they have all been great. Recipes become available online the month after the magazine goes out, so there are absolutely loads more for me to try.

This was very tasty, but not enormous. Fortunately Matthew had just polished off some leftover naan bread or he would have been hungry I think, That said, the portion suggestion is very low in calories, so if you serves this as three portions it would still be under 500kcal. It was incredibly easy to make – under 30 minutes start to finish – and I’ll definitely make it again. I might consider doubling the number of courgettes – as this made very little, and courgettes are pretty harmless.
