Recipe of the Week

I am always keen for our meals to be huge, but without them becoming ridiculously calorific. This basically involves vegetables. Lots and lots of vegetables.

This is another recipe from my beloved Healthy Food Guide (URL in the below title), and I added three huge courgettes – converted into courgetti with a julienne peeler – for bulk.

Spicy Calamari Pasta (and Courgetti)

Serves 4

This was pretty easy to make, and very quick. I managed to cook this after doing the deck of cards workout without the evening descending into panic and cries of “THERE’S JUST NOT ENOUGH TIME”. Textbook.

I even remembered to take my contact lenses out before chopping the chili which removed another source of great anger from the equation. Of course it involved the food processor which always involves rage as I OF COURSE forgot to put the blades in before I filled it up. Then I rubbed chili in my eye anyway. Then I overcooked the pasta. Then I tipped quite a lot of food on the hob when the cleaner had been earlier that day.

Anyway, none of these fuck ups are inherent to the recipe – it was easy to make; I just made it look hard.

Fortunately, I had a good sous chef.
